We are going out of town for the week. I had to plan for right before we left and then have stuff on hand for when we get back. Thus, frozen pizza on the meal list and lots of leftovers.
Meals for the week are…

- Ground Beef Nachos
- Leftover Taco Soup
- Leftover Veggie Soup
- Avocado Toast
- Frozen Pizza
- Frozen Pizza
- Bacon (precooked from Trader Joes)
- Organic whole milk
- 2 green & red bell peppers
- 1 bag brussel sprouts
- 2 stalks of broccoli
- Chicken Sausage
- 1/4 lb of Turkey (for sandwiches)
- Cheese (for sandwiches)
- 2 Bags of apples
- Frozen Spinach (for green smoothies)
- Cayenne ginger shots (we really do feel like these help to keep sickness at bay!)
Taco soup has become a staple in our home. This is leftover and I’ll pull it out of the freezer the night before!
Sheet pan meals are so simple and can be very nutritious. We will do garlic and herb chicken sausage, broccoli, brussel sprouts, , carrots, and small russet potatoes. This week I will put ranch over it all! Check out previous weeks for other variations of this meal.
Veggie Soup. This is also leftover and in the freezer! I’ll put it out the night before and have ready to go. Fresh parmesan over it is heavenly.
Ground beef nachos. Normal run of the mill nachos. Since it’s a travel week and I still have to work and clean, I can’t put together elaborate meals. It is what it is. I will layer chips, refried beans, cooked and seasoned ground beef, cheese, diced yellow onion, jalapeno. Put it in the oven for 15 min on 400. Take it out and top with avocado, sour cream (or greek yogurt), cholula, squeezed fresh lime juice, lettuce, and all done! Add whatever want. It’s just nachos, but I like them piled high!
Avocado toast will either be a lunch or dinner. Not sure yet! Either way, I do hard boiled eggs, avocado, fresh tomato, spinach, cholula and it’s done! You’ve got a protein, healthy fat, greens, and freshness with a little heat. Sometimes I will add everything but the bagel seasoning, but sometimes its too salty for me.
Frozen pizza. Need it in the fridge for when we get back in town. We will get back over the weekend and at a weird time so I need something easy to toss in the oven. It won’t be nutritious or healthy, but hey, everything in moderation.
If I don’t use all of our bananas I will just slice them and put them in the freezer! Be sure to take off the peel. They can be used for smoothies when we get back!
I will also make fresh applesauce. We love to have it on hand. Just put peeled and cored apples in a pot with as much cinnamon as you would like and wait for it to get mushy! About 45 min. Then I put it in the blender and save it in the fridge.
Total for the week: Saturday-Tuesday was $112. Plus one extra meal (frozen pizza) when we get back into town. I did buy a little more than we needed because we have some company coming to visit before our trip! All-in-all pretty good!!
**We buy organic when possible. This has made our grocery bill higher, but the benefit outweighs the cost for us. I am also gluten free and have been for approximately 10 years. The options now are so much better than they used to be, but are still expensive! Both of these things can make our bill higher, so if you want to make these meals a little more cost effective you can I’m sure!
