Oh how I wish I was having this meal in Switzerland again, but we aren’t so here are our meals.
Meals for the week are…
- Veggie and Chicken Sausage Sheet Pan & Rice
- Grilled or Baked Chicken with Veggies and Fries
- Pesto and Chicken Sausage Gnocchi
- Kung Pao Chicken
- Organic whole milk
- Almond Milk
- 2 bags of brussel sprouts
- 2 stalks of broccoli
- Chicken Sausage
- 1/4 lb of Turkey (for sandwiches)
- Cheese (for sandwiches)
- GF Waffles
- Garlic Powder
- Gerolsteiner Water
- 3 lbs. of Chicken
- Spaghetti Noodles
- Ground Beef
- Coconut Aminos (GF soy sauce)
- Frozen Green Beans
- Frozen French Fries
- Cayenne ginger shots (we really do feel like these help to keep sickness at bay!)
Sheet pan meals are so simple and can be very nutritious. We will do garlic and herb chicken sausage, broccoli, brussel sprouts, , carrots, and put it all over rice with coconut aminos.
Grilled or baked chicken with leftover veggies and frozen fries! This will depend on the weather. It might be way too cold out to grill. I made up my own marinade this week. I’ll let you know if it’s good and share the easy recipe! Just using our leftover veggies with this meal and adding french fries.
Kung Pao Chicken. This one is SO GOOD. We’ve been doing this for about 2-3 years now. Cook your cubed chicken in sesame oil. Take out chicken and set on a paper towel to soak up the juices. Use the same pan and add more sesame oil and add frozen or fresh green beans (not canned). Once these are a tad blistered or cooked to your liking add back in your chicken. Mix up siracha, chili paste, honey, garlic powder, and coconut aminos. I just taste as I go and see if I like it! Pour it over the chicken and green beans. Add peanuts and sesame seeds at the end. Put it all over rice or cauliflower rice! So so yummy and easy. I’ll add carrots sometimes too!
I bought frozen gnocchi at Trader Joe’s and will use it to make pasta! I like to get it nice and browned in a pan on the stove. I’ll add pesto and a little half and half when it’s all nice and browned and a tad crispy. I’ll add some of the garlic and herb chicken sausage too.
Good ‘ol spaghetti. Marinara, ground beef, noodles. That’s all we do. One of bubs favorites. Sometimes I will make my own sauce, but I’m not this week.
I will also make fresh applesauce. We love to have it on hand. Just put peeled and cored apples in a pot with as much cinnamon as you would like and wait for it to get mushy! About 45 min. Then I put it in the blender and save it in the fridge.
Total for the week: Monday-Sunday $140. Plus one extra meal, eating out with family over the weekend.
**We buy organic when possible. This has made our grocery bill higher, but the benefit outweighs the cost for us. I am also gluten free and have been for approximately 10 years. The options now are so much better than they used to be, but are still expensive! Both of these things can make our bill higher, so if you want to make these meals a little more cost effective you can I’m sure!
